From Webber to Archetype: The History of 119 S Broadway
In 1917, the Webber Show opened its doors to the public. Seating 1,000 people, the theater was said to be unequaled in the whole United States at the time of its opening.
It remained a cornerstone of culture for the residents of Baker until the late ‘70s, when it became Kitty’s South, a place that still showed films, just maybe not any you’d want to take your kids to. After Kitty’s shuttered in 2007 and the building’s historic status stripped, the future of this once preeminent venue had become quite uncertain.
Archetype has breathed new life into the theater’s old bones, remodeling and renovating it from the ground up while maintaining its famous and prominent façade. 119 S. Broadway is now home to the Archetype Distillery, and we aim to reclaim our status as a cultural icon of Denver.
Michael Chapyak – President/Master Distiller
Michael is the President and Head Distiller at Archetype Distillery located in Denver, CO. His interest in the field of distilling stems from his family’s background of exploring independent spirits. Michael earned a Bachelor of Science degree from Springfield College in Springfield, MA in 1999 and in 2002, he went on to receive his Masters of Science degree from Columbia University in New York, NY.
Ready for a life change, after bartending in New York and working in the healthcare industry, Michael moved to Colorado to begin his quest of owning and operating a bespoke distillery and social epicenter. After earning his Moonshine University certificates in Louisville, KY, he enhanced his skill base through multiple distillation and fermentation certificate programs, on both a domestic and international level. He has also engaged with a number of gin distillers throughout the UK, gaining critical insights into historical and contemporary distilling techniques from the origination of modern gin.
Simon Nicolian – Drinksmith and Director of Mixology & Education
Simon is Archetype's very own Master Mixologist and Sommelier of Wine, Spirits and Sake. He brings superior knowledge and experience to our tasting room from the international bar and wine world. Simon grew up at his family hotel on the island of Anguilla. That sparked his passion for food and drink, and paved his way to the hospitality industry.
From a young age, his favorite spot was always at the bar. In London 1991, Simon started learning and perfecting his craft of the cocktail in SoHo, and branched out from there. Simon bartended for royalty and A-listers at Mahiki, the famous tiki club in London, The Farinet Hotel Bar in Verbier Switzerland and fine dining cocktail lounges and restaurants like ¨Hatted¨ Bentley in Sydney. Jumping over to this side of the pond, he spearheaded the drink program at the Montauk Yacht Club in the Hamptons of New York, but has now thrown anchor here in Denver.
Simon's passion for drinks and education has won him numerous competitions and prestigious awards for opening and being a part of some of London’s best cocktail bars and clubs, Bartender of the Year in Switzerland, and a Time Out Award in Sydney for Rockpool.
With his 15 years of experience mixing fine drinks around the world and focusing on acquiring his Masters of Wine, Simon brings a wealth of knowledge to our tasting room guests and customer-facing education program and masterclasses.
